RISOTTO lemon, rosemary, pear
(Recipe Masseria Moroseta)
Ingredients
320 gr Carnaroli rice
vegetable stock
1 unwaxed lemon
fresh rosemary (ideally with flowers)
20 gr parmesan
40 grated pecorino cheese
40 gr butter
dry white wine
Timut pepper/black pepper
1 pear (not too ripe)
40 gr of toasted almonds, coarsly crushed
For soffritto (optional): 2 shallots or 1 white onion or 1 leek
Instructions
Wash and peel your pear. Dice in small cubes, 0.5x0.5 cm.
Marinate with juice of half a lemon, lemon zest, finely chopped rosemary, freshly ground pepper and a drizzle of olive oil. Stir well and keep aside.
Optional: start with a soffritto of onions, shallots or leek.
Heat a tbsp of butter in a pan and add diced shallots with a pinch of salt.
Cook gently for 10 minutes, until traslucent and soft. Keep aside.
Heat a tbsp of olive oil in a medium pan, add rice and toast for 4 minutes until fragrant, pour 2 tbsp of white wine and let evaporate completely.
Start pouring a ladle of hot stock, little by little, (add your cooked soffritto now), stirring continuesly at medium heat.
Risotto should simmer gently for 15/16 minutes at medium/low heat. (note that cooking time depends on the quality of rice you are using.)
When rice is cooked but still al dente take off heat, add diced pear with all the marinating juices and let rest for 2 minutes covered with a lid, so the rice releases its starch.
Now add butter, pecorino, parmesan cheese, and a little more lemon juice for acidity.
Beat the rice until creamy, add a little broth if it seems too thick.
Stir very well and divide into 4 plates.
Top with freshly ground timut pepper, almonds, lemon zest and rosemary flowers.

Guerrila Store by Comme des Garçons
Faced with the standardization of spaces dedicated to shopping but also with regard to the frequent architectural ostentation in the matter, the Japanese brand Comme des garçons opened and closed from 2004 ephemeral shops, names Guerrilla Store, all over the world. The concept was launched in February 2004 in Berlin. Now closed, eleven stores have followed, from Copenhagen to Singapore or Athens. For each opening, local partners are associated with the project to find and operate a place of sale, which must be off-center and away from proven commercial areas. Whatever their success, the occupation can not exceed one year. The brand provides the merchandise, a mix of eras where vintage meets novelties, again with the aim of breaking the rule of the seasons that rhythm fashion.
